Head on over to your local bookstore and pick up some of the great Star Wars novels. There are many that depict the rebuilding of the galaxy and the Jedi after the fall of the Empire.

I think doing sequel trilogy to star wars would suck. GL would completly ruin the Expanded Universe, and, they might end up being just like Episodes 1 and 2. Really flashy, and really cool, but lacking the overall feeling that makes it a star wars movie. (Though episode 2 came very close)
